Meals at a glance....

My oldest son just had his braces removed.  A big milestone in our household this week!  It can be a challenge to find the time to squeeze in one-on-one time time with four kids, but with the help from some friends I was able to take my son out for a celebratory lunch.  He chose Panera Bread.  Great, because I was in the mood for a big salad.  However, I was happily surprised by the new broth bowls on the menu.  I had a quinoa and lentil broth bowl with hard boiled egg on top.  It was delicious and inspired me to recreate a similar meal at home.  With some recipe ideas from the March issue of Fitness magazine, I planned one bowl meals to have for the following week's dinners.   Easy, affordable, healthy and great tasting food.

How to build your own bowl meals:

First, choose a grain base like quinoa, rice, farro, whole wheat pasta, etc.  Next choose a protein, either lean beef, beans, eggs, fish or poultry.  Select veggies.  Be creative and throw in a variety!  Last add some toppings like cheese, nuts, seeds, yogurt, pesto, spices, and avocado.  Have fun and be adventurous.  If you have children at home, let them help with the menu and choose their favorites.

Our picks for the week:

Monday:  keeping it meatless--Roasted Sweet Potato, Quinoa & Fried Egg Bowl (Kind of like our potato bar night with a new twist!)

Tuesday: Brown Rice Pasta, Great White Northern Beans with Arugula Pesto

Wednesday:  Steak, Roasted Veggies and Polenta Bowl (Saving time and buying pre-made polenta)

Thursday:  Homemade Chicken and Dumpling Soup

Friday:  Odds & Ends Night--Picnic Style Dinner--Baked Tortilla Chips Nacho Platter with Ground Turkey, Beans, Cheese, Peppers, Tomatoes,  & Avocados,  and an assortment of fruit, veggies, dips, bread & cheeses.

Saturday: Spicy Shrimp & Soba Noodle with Edamame

Sunday: Salmon, Rice & Kale Bowl
