Meals at a glance...

This week after watching a film in science class about bacteria, my daughter came home and announced that she is now a vegetarian.  She does not want to eat chicken especially because of  the chance of developing food poisoning.  Wouldn't you know that after she makes this announcement we have roasted chicken, and that night my youngest son is sick to his stomach!  I know it is not from the chicken  and from a stomach bug, but she gives me a look like, "I told you so!"   I have no problem with her wanting to cut back on her meat intake, but I'd like her to know her choices and learn more facts about food poisoning.   I did a little research and learned something myself.  There is a new movement called, Reducetarian.  Reducetarians are individuals committed to eat less meat for various reasons, but do not avoid eating meat completely.  I am a reducetarian,  I eat more of a plant based diet with a small serving of animal protein.  I described this new term to my daughter and she thinks it's doable.  Just no chicken for now!

Last week's favorite meals were the quesadillas and almond crusted chicken.  Haven't had the salmon yet, that's tonight, but I have a feeling that will be a hit too.  We're going to try to do meatless Monday's and really fill our plates with veggies.  Our week ahead looks like this.....

Monday:  Baked Pepper Jack Quinoa Skillet- This recipe is from the January Good Housekeeping issue.  It looks delicious.   One of my son's said it looks like veggie nachos.  We may have to have some tortillas with it!

Tuesday:  Tex-Mex Chicken Soup--not sure if the chicken will be a hit with my daughter, but it's another recipe from GH and everyone thought it looked good.  Its simple to make on busy nights and is a hearty meal.

Wednesday:  Salmon Caesar Salad with a hearty whole grain bread

Thursday:  Asian Vegetable Rice-Noodle Bowl--thanks Kids Cook Monday for this recipe.

Friday:  Roasted Winter Veggie Salad and Whole Wheat Pizzas

Saturday:  BBQ Pork with Sweet Potatoes and Salad

Sunday:  Ginger Shrimp with Swiss Chard and Bell Peppers- Fitness Magazine January issue


I know many of you can relate to the endless driving around to after-school activities and sports, so I hope some of these meals work for you.  They are easy to prep before you head out the door to drive kids places, and do not take long to prepare.  If you can't find the recipes, please contact me and I'll happily send them to you.
